Method
Melt the butter in a microwave-safe bowl on High for 30 seconds, add the spring onions and cook on High for 2 mins.
In another microwave-safe dish, layer slices of potato, pumpkin, spring onions and zucchini, finishing with a layer of potato.
Sprinkle cheese, pepper and dried thyme over it.
Cook on Medium for 30 mins.
