Baby corn sabzi

Method
  1. Cut the baby corn to your desired shape and boil with salt and turmeric powder until done.
  2. Heat a pan with oil and temper with the cumin.
  3. Add onion and green chillies and fry till transparent.
  4. Add the cooked baby corn and red chilli powder and cook for 2-3 minutes
  5. Add the tomato and capsicum and fry for 2-3 more minutes in medium flame
  6. Top with coriander leaves and drizzle with some ghee if you want,gives a nice touch…
  7. Fry for a minute and transfer to the serving bowl.
  8. Serve as accompaniment for rice or roti

Note: You can add finely chopped ginger along with onion if you like. You can also pressure cook baby corn instead boiling in an open pan.

Ingredients:
12 - baby corn
1 - onion, chopped
2 - tomatoes, chopped
1/2 - capsicum, cubed
2 - green chillies
3/4 tsp - red chilli powder
2 tbsp - coriander leaves
1/8 tsp - turmeric powder
Salt and water, as needed

To temper:
1 tbsp - oil
1 tsp - cumin
