Method
  1. Add sugar to warmed milk.
  2. Sprinkle yeast over it, cover and keep aside.
  3. Mix flour and salt, and rub in butter to blend well.
  4. When yeast mixture has becomes frothy, add to flour.
  5. Mix flour and knead to a smooth soft pliable dough.
  6. Keep covered till required for use, or keep for 30 minutes.
  7. Take a pingpong sized lump of dough, roll into a thick naan or roti.
  8. Deep fry in hot oil, till puffed and light golden and soft.
  9. Serve hot with other delicacies including curries, gravies, rices.

Making time: 45 minutes (except proving time)
Makes: 4-5 khameeri rotis.
Sheflife: 1 day

Ingredients:
2 1/2 cups - wheat flour
1/2 tbsp - butter
1 tsp - active dry yeast
1/2 tsp - sugar
1/2 tsp - salt
1/2 cup - warm milk
1/4 cup - warm water (if required)
oil to deep fry
