Pre Preparation:
  1. Cut paneer/tofu into deisred shape(long rectangle/trinangular shaped).
  2. Finely chop onion,garlic,tomatoes and ginger.
  3. Cut all the vegetables (try to cut in same shape).

Preparation:

  1. Heat oil in heavy pan.
  2. Add cumin seeds, asfoetida. Stir it.
  3. Add finely chopped garlic, ginger and onion and stir it until it becomes light brown in color.
  4. Mix turmeric powder,coriender powder,salt,red chilli powder.
  5. Fry it for 3-4 mins.
  6. Add chopped tomatoes in it and fry it for some time.
  7. Add all the cooped vegetables in it except paneer/tofu.
  8. Cover it and cook it for 10-15 mins at medium heat.
  9. Open the cover and add pasta sauce,paneer/tofu cubes.
  10. Cook it again to remove the excess water if required.
  11. Sprinkle garam masala and amchur powder.
  12. Garnish it with cream or with butter depending upon the taste.

Note:
You can use frozen vegetables also instead of fresh.
You can replace paneer with tofu.
Combination with tava roti.

Ingredients:
2 to 4 cubes - paneer/tofu
8 to 10 - spinach leaves
1/2 - onion chopped
1 - chopped tomato
8 to 10 slices - mushroom
5 to 6 - cut beans
2 to 3 florlets - cauliflower
5 to 6 leaves - cabbage
4 to 5 - grinded carrot
1 or 2 florlets - brocolli (optional)
1 - chopped green capsicum
1 bowl - green peas
1 bowl - corn seeds
1 bowl - lima beans (optional)
2 tbsp - pasta sauce
finely chopped - ginger
finely chopped - garlic
1/2tsp - cumin seeds
2 tsp - coriender powder
1/2 tsp - tumeric powder
1 tsp - red chilli powder
1 tsp - kashmiri mirch/deggi mirch
1 tsp - garam masala
1 tsp - amchur powder
salt to taste
