Method
For Batter:
  1. Wash and soak rice in water for 4 hours.
  2. Wash and soak dal with fenugreek seeds for 1 hour.
  3. Grind the dal using the water in which it was soaked, till light and fluffy.
  4. Grind the rice into smooth batter.
  5. Mix the rice and dal batters together.
  6. Add salt to taste and mix well.
  7. Add water if needed to make a thick pouring batter.
  8. Keep covered over night to ferment.

For Filling:
Mix all the ingredients together.

For Uthappam:

  1. Heat a non stick dosa pan on moderate heat.
  2. Pour a ladle full of batter and spread to a round of about .5 cm thick. Pour � tsp of oil all around it.
  3. Sprinkle some filling on top and sprinkle some oil over the filling.
  4. When the under side of uthappam is cooked and the top side id lightly set, carefully turn over the uthappam.
  5. Pour � tsp oil around it and cook the under side on low heat.
  6. Serve hot with coconut or tomato chutney.
  7. Use all the batter and filling thus.

Serves: 4 to 6

Ingredients:
For Batter:
2 cup - parboiled rice
1/2 cup - black gram (urad) dal
1/2 tsp - fenugreek seeds
salt to taste

For Filling:
100 g - paneer, grated
1/2 cup - onion, finely chopped
1/2 cup - tomato, chopped (discard seeds)
2 tsp - green chilies, finely chopped
2 tbsp - coriander leaves, chopped
1/2 tsp - salt
