Ginger Garlic Tomato Rice

Method

  1. Heat oil in a kadai or heavy bottom vessel, add rai, jeera, kadi pattha stir for few seconds and add ginger garlic paste (if you dont have paste can chop this both into tiny bits), stir for few seconds.

  2. Now add finely chopped red fresh tomatoes and stir for few seconds when tomatoes turn little tender add salt, mirchi powder, haldi powder, dhania powder and garam masala and stir for few seconds and wait till oil separates from the side of the dish.

  3. If the tomotoes have become sligtly dry you can add water just 1/2 cup or LESS but NOT MORE and stir few seconds and add already cooked rice. Stir continuously till the tomotoes is fully covered by rice. Garnish with chopped coriander just after taking out from flame.

  4. Have it with Papad or Wafers.

Tips:

  1. Tomatoes should be fresh and red ones finely chopped, if you think the tomatoes are less add some more chopped ones o.k

  2. After the rice is cooked separate them in a big plate.

Ingredients:
Cooked Rice (see that its not overcooked)
Rai 1 teaspoon (small)
Jeera 1 tea spoon (small)
Kadi Pattha 10 to 12 leaves
Chopped Tomatoes (red ones) 1 glass
Ginger Garlic paste 1 tea spoon
Salt according to taste
Chilli Powder 3/4 spoon
Turmeric (haldi) powder 1/2 spoon
Garam Masala powder (optional ) 3/4 spoon
Dhania 1 spoon
Coriander leaves (finely chopped) 1 bunch
Water 1/2 cup (if required)
Oil 3/4 small cup
