First fry the rava with 2 tsp of ghee or oil in a
pan with medium heat till rava turns to very light
brown in colour and keep it aside separately.
Take a deep pan or kadhai, put 3 tsp of oil or ghee
and when it gets heated put mustard and curry leaves
when it splutters add the chopped onion and fry till
it turns to brown in colour.
Now add the ginger paste or ginger chopped to the
onion and fry for a minute, then add the chopped
tomatoes to it and fry for a minute in a medium heat.
Add the Half boiled Vegetables.
Now add 4 glasses of water to the above
content, wait for a while till the poured water is
boiling, when it boils immediately add the fried rava
and keep on stirring with a spatula
( Note: Adding rava and stirring requires
simultaneous process,Be careful with the boiling
water,reduce the heat to medium).
Keep on stirring the rava it gets to thick,now
your tasty delicious vegetable Kichdi is ready to
serve, hot with coriander leaves furnished on
Soji Vegetable Khichdi goes well with
coconut, Groundnut chutney.
Can have this Khichdi for morning tiffin as well
as for evening tiffin.
You can try this vegetable khichdi with Vermicelli
sevaiya instead of sooji or rava.

Ingredients: Sooji(Rava) - 2 cups
Onion - 1(medium)
Tomatoe - 1 no.
Ginger paste - 1tsp.
Vegetables like Peas, carrots, Sliced in Small sizes - 1 cup (half boiled in water)
Oil or ghee - As required.
Salt - As required.
Mustard and Curry leaves - A little amount.
