Sweet Potato Capsicum Rice

Method

  1. Fry the above ingredients in little oil until golden and powder.

  2. Cook rice and cool.

  3. Heat 2 Tblspoon of oil in a pan and add mustard, urad dal, channa dal, hing & curry leaves.

  4. Add peanuts and fry until golden brown.

  5. Add onions and fry

  6. Add capsicum and cook until soft

  7. Add sweet potatoes and cook for 2-3 minutes.

  8. Add the masala powder, salt & a pinch of sugar

  9. Mix well with cooked rice.

  10. Garnish with coriander leaves and fried cashewnuts.

Serve hot with onion raitha & papad.

Ingredients:
2 Cups rice (basmathi)
1 medium sweet potato diced
1 large capsicum
1 onion sliced
2 Tbl spoon peanuts

Powder:
2 TBl spoon dhania
1 teaspoon urad dal
1 teaspoon channa dal
2 tblspoon dried coconut
