MethodFor Filling:
- Boil channa dal in plenty of water till grain is cooked but firm.
- Drain out all the water, pass dal through a chilli grater or almond crusher.
- Heat ghee, add chillies, dal, stir fry till any leftover moisture is absorbed.
- Cool mixture a bit.
For Dough:
- Sieve flour and salt.
- Add milk, knead into soft pliable dough, using enough water.
- Knead for 3-4 minutes, till dough is smooth and elastic.
- Cover with moist cloth, keep for 20 minutes.
To Proceed:
- Divide dough into 8 portions, form balls of each.
- Divide mixture into 8 portions, form patties of each.
- Take a portion of dough, roll into 5� wide round.
- Place a pattie in centre, fold dough from sides to centre over pattie.
- Press gently with palm, roll in some dry flour.
- Roll carefully to 7� wide paratha.
- Shallow fry on both sides, till crisp and golden.
- Serve hot with gravy potatoes, curds or pickles.
