Channa Dal Parathas

Method
For Filling:
  1. Boil channa dal in plenty of water till grain is cooked but firm.
  2. Drain out all the water, pass dal through a chilli grater or almond crusher.
  3. Heat ghee, add chillies, dal, stir fry till any leftover moisture is absorbed.
  4. Cool mixture a bit.

For Dough:

  1. Sieve flour and salt.
  2. Add milk, knead into soft pliable dough, using enough water.
  3. Knead for 3-4 minutes, till dough is smooth and elastic.
  4. Cover with moist cloth, keep for 20 minutes.

To Proceed:

  1. Divide dough into 8 portions, form balls of each.
  2. Divide mixture into 8 portions, form patties of each.
  3. Take a portion of dough, roll into 5� wide round.
  4. Place a pattie in centre, fold dough from sides to centre over pattie.
  5. Press gently with palm, roll in some dry flour.
  6. Roll carefully to 7� wide paratha.
  7. Shallow fry on both sides, till crisp and golden.
  8. Serve hot with gravy potatoes, curds or pickles.

Makes: 8 parathas

Ingredients:
For Filling:
1 cup - channa dal, washed
2 to 3 green chillies, crushed
1/2 tsp - turmeric powder
2 tbsp - ghee
salt to taste

For Dough:
2 cups - wheat flour
1 tbsp - milk
salt to taste

Other Ingredients:
butter or oil for shallow frying
