Corn and snowpeas salad

Method
  1. Rub oil on the capsicums and place the capsicums under a very hot grill until the skin of the peppers chars and blisters
  2. Rub off skin under cold running water.
  3. Dry off the capsicum with absorbent paper towels.
  4. Cut the capsicums into 1-inch pieces.
  5. Blanch the snowpeas in boiling salted water for 2-3 mins. Drain.
  6. Refrigerate the corn, snowpeas and capsicum for a while.
  7. Mix the mayonnaise and djon mustard with the chilled corn, snowpeas and capsicum.
  8. Sprinkle chives and garnish with eggs.

Ingredients:
325 kg. baby corn (each sliced into 3 pieces)
350g snowpeas
6 eggs, boiled and sliced lengthwise into 2 pieces
3 tbsp. chives, finely chopped
270 ml. mayonnaise
1 tsp. dijon mustard
1 red or yellow capsicum
1 green capsicum
