Method
- Rub oil on the capsicums and place the capsicums under a very hot grill until the skin of the peppers chars and blisters
- Rub off skin under cold running water.
- Dry off the capsicum with absorbent paper towels.
- Cut the capsicums into 1-inch pieces.
- Blanch the snowpeas in boiling salted water for 2-3 mins. Drain.
- Refrigerate the corn, snowpeas and capsicum for a while.
- Mix the mayonnaise and djon mustard with the chilled corn, snowpeas and capsicum.
- Sprinkle chives and garnish with eggs.
