Method
- Peel the lauki, wash and finely grate.
- Boil the grated lauki in one cup water for five minutes.
- Remove from the gas.
- Drain out the water completely and cool the lauki .
- Beat the curds with little water.
- In a bowl mix together the lauki and curds.
- Add salt. Heat a tsp of oil. Add mustard seeds.
- When the seeds splutter remove from gas. Cool .
- Add to the raita and mix well.
- Garnish with cumin seed powder and coriander leaves.
Ingredients:
¾ piece - a small lauki
500 g - curds
½ tsp - mustard seeds
1 tsp - oil
¾ tsp - cumin seed powder
salt to taste
finely chopped coriander leaves (to garnish)
