Lauki Ka Raita

Method
  1. Peel the lauki, wash and finely grate.
  2. Boil the grated lauki in one cup water for five minutes.
  3. Remove from the gas.
  4. Drain out the water completely and cool the lauki .
  5. Beat the curds with little water.
  6. In a bowl mix together the lauki and curds.
  7. Add salt. Heat a tsp of oil. Add mustard seeds.
  8. When the seeds splutter remove from gas. Cool .
  9. Add to the raita and mix well.
  10. Garnish with cumin seed powder and coriander leaves.
Ingredients:
¾ piece - a small lauki
500 g - curds
½ tsp - mustard seeds
1 tsp - oil
¾ tsp - cumin seed powder
salt to taste
finely chopped coriander leaves (to garnish)
