Vegetable Raita

Method
  1. Mix together the cucumber, tomato, onion, chilli, half the coriander, te yoghurt and salt.
  2. Heat the oil and fry the remaining ingredients until the mustard seeds start crackling.
  3. Add to the yoghurt and garnish with the remaining coriander.
  4. Serve cold or at room temperature.
Ingredients:
1 - cucumber, peeled and finely chopped
1 - tomato, skinned and finely chopped
1 - onion, finely chopped
1 - green chili, finely chopped
1 - small bunch fresh coriander (cilantro), chopped
450 ml / 3/4 pt - natural (plain) yoghurt
10 ml / 2 tsp - oil
5 ml / 1 tsp - mustard seeds
5 ml / 1 tsp - cumin seeds
5 ml / 1 tsp - split black beans
5 ml / 1 tsp - yellow split peas
2.5 ml / 1/4 - asafoetida
1 - dried red chili, halved
2 - curry leaves
salt
