Pumpkin and Macaroni Soup

Method
  1. Cook macaroni in salted boiling water. Drain and reserve.
  2. Heat the oil and fry onion and garlic till fragrant.
  3. Add cumin and chilli powder, fry for few seconds.
  4. Add the pumpkin and water or stock.
  5. Simmer till the pumpkin is cooked.
  6. Cool and blend till smooth. Add salt to taste.
  7. Add the cooked macaroni and coconut milk to the soup.
  8. Heat thoroughly and serve garnished with coriander leaves.

Serves:6 to 8

Ingredients:
2 cups - yellow or red pumpkin, peeled and cubed
1 � litre - water or vegetable stock
200 ml - coconut milk
1 cup - onion, chopped
� cup - short macaroni
1 tbsp - vegetable or peanut oil
2 tsp - garlic, minced
1 tsp - cumin powder
� tsp - chilli powder
coriander leaves to garnish
salt to taste
