Method
- In a saucepan, in 1/2 tsp oil saute onions, garlic and lemon grass until soft.
- Add the lentils along with the spices.
- Add the coconut milk, 2 cups water (add more to suit your consistency) bring to a boil and then simmer covered until soft and mushy
- Add the juice of lemon, scallions, salt, pepper.
- Serve warm garnished with scallions, paprika and cilantro.

2 cups - coconut milk (freshly made, or canned)
1 cup - red lentils, washed until water runs clear
1 - onions,finely chopped
2 to 3 cloves - garlic
1 inch piece - lemon grass, chopped into thin slices
1 tsp - cumin coriander powder
1 tsp - paparika (or as per taste)
1 - lemon
3 - scallions
salt and pepper to taste
few sprigs of cilantro for garnish
