Mudaikathan Keerai Dosa

Method
  1. Soak rice in water for at least two hours.
  2. Clean the greens and measure two cups full.
  3. Grind soaked rice along with greens, chillies, curd and salt into a fine batter.
  4. Allow this batter to ferment over night.
  5. Add enough water to the batter to make it into pouring consistency (just like rava dosa batter).
  6. Heat the skillet and pour a ladle full of batter starting from the edges in a circular way.
  7. Since the batter is loose, it will automatically fill the middle portion.
  8. Add a spoon of oil to roast it.
  9. Turn the dosa and roast it on the other side too.
  10. Serve hot with garlic or onion chutney.

2 cups - Balloon Vine greens / Mudaikathan Keerai
2 cups - parboiled rice
3 - green chillies
1 cup - curd
Salt to taste
