Crispy onion uttapam

To prepare dosa batter:

  1. Wash & soak 3 cups of rice & 1 cup of urad dal in separate bowls for 5 to 6 hrs.
  2. Soak a tsp of methi seeds and ½ cup poha along with the rice.
  3. Grind all the ingredients to batter consistency.
  4. Add salt , mix well.Keep aside for overnight for fermentation of batter.
  5. To prepare Uttapam:

    1. Chop onions to fine slices.
    2. Keep the skillet / girdle on a medium flame, smear oil all over.
    3. Temper with mustard, asafetida pwd, cumin, split urad dal, chana dal, red chilly & finely chopped curry leaves.
    4. Wait to splutter.Add chopped onion, saute for a minute.
    5. Add grated cashews and saute further.Transfer this to the batter.
    6. Add freshly chopped coriander leaves & mix well.
    7. Take a ladle full of batter and spread over the skillet.
    8. The thickness should be like a pan cake.
    9. Drizzle oil on all sides and allow it to cook until the other side turns crisp & golden brown in color.
    10. Gently flip the uttapam to other side and allow to cook.
    11. Take out the uttapam from the skillet.
    12. Serve hot immediately before it looses its crispiness.

Ingredients:
2 cups dosa batter
2 onions
2 tbsp oil
1/4 tsp mustard
Pinch of asafetida pwd
1/4 tsp cumin
1/2 tsp split urad dal
1 tsp chana dal
1 or 2 red chilly
6 or 7 curry leaves
4 to 5 cashew nuts
Coriander leaves
Salt to taste
