Ragi & Maida Dosa

Method
  1. In a pan, heat a little Oil.
  2. Add the mustard seeds.
  3. After they have spluttered, add hing powder, and the curries leaves and keep it aside.
  4. In another bowl, add the ragi Flour (can use roasted Ragi Flour too), and the maida flour.
  5. Add water to make it a very thin batter, as for dosa.
  6. Add the seasoned ingredients, salt, sugar, cut ginger pieces, coconut and cilantro.
  7. Take a non-stick pan, and after it's heated, add the dosa batter.
  8. Add oil to the edges of the dosa.
  9. Flip it the other side and cook it again for a few minutes.
  10. Serve hot with pickle, or chutney.

2 cups - ragi flour
2 cups - maida ( all purpose flour )
2 tbsp - mustard seeds
2 tsp - hing powder
6 to 7 - curry leaves
1/2 inch - ginger, cut into small pieces
4 tbsp - oil
2 tbsp - grated coconut
cilantro ( optional )
sugar to taste
salt to taste
water
