Method
  1. Mix together phudina leaves, coriander leaves, green chillies, red chilli powder, turmeric powder, ajawin and cumin seeds.
  2. Add this mixture to the wheat flour along with salt and oil.
  3. Mix well. Add sufficient water to make a semi soft dough.
  4. Divide the dough into equal portions.
  5. Smoothen each portion.
  6. Dip into flour and roll it out like a thick roti.
  7. Pre-heat the tawa, rub the tawa with little ghee.
  8. Roast the parathas on a medium flame till golden.
  9. Apply 1 tsp ghee when flipping sides.
  10. Serve hot with different raitas and mango pickle

Note: All parathas can be served with a dollop of butter on them.

Ingredients:
4 cups - wheat flour
1 small bunch - phudina leaves (finely chopped)
handful of coriander leaves (finely chopped)
4 - green chillies (finely chopped)
1 tsp - red chilli powder
1/2 tsp - turmeric powder
1/2 tsp - ajwain
1 tsp - cumin seeds
3 tbsp - oil
6 to 7 tbsp - ghee
salt to taste
