By : Saroj KeringTake 2 tbsp. plain or wheat flour in a dry pan.
Stir gradually, while heating on medium flame.
When flour exudes aroma, and very lightly changes colour, take off fire.
Allow flour to cool in pan.
Add 1/2 can sweetcorn cream style to flour.
Add 1 tsp. crushed herbs (mint, thyme, basil, oregano, rosemary, etc.) of choice.
Add salt, pepper, green chillies to taste.
Mix well with hand, to blend the flour and no lumps are left.
Return to heat, stirring continuously, till mixture is thick.
Take off fire, cool a little.
Put dollops of corn mixture on slices of bread or toast.
Sprinkle with grated cheese, grill or bake in preheated on (150oC) for 4-5 minutes.
Serve hot and crisp.
