1.Roasted Gram Flour (Besan) which is used in the marinade helps the masala stick to the tofu when shallow fried.
2.You can replace tofu with paneer and also use a sliced, half-cooked potato.
3.Use non-stick pan to get the best results; cook on a low to medium flame.
4. You need not use much oil.
For marinade:
1/4 cup - thick yogurt/hung yogurt
1 tsp - ginger and garlic
1/2 tsp - chilli powder
1/2 tsp - Kashmiri chilli powder
1/2 tsp - garam masala
1/2 squeezed - lemon v
Salt to taste
2 tsp - besan/gram flour
oil - to smear or for shallow frying
For making sandwich :
Bread - wheat or white
Mint chutney, coriander chutney
2 to 3 slices - raw onion (optional)
Cucumber slices, a few
Chaat masala, a little
