Zucchini and spinach sandwich

Method
  1. Heat butter in a griddle and grill bread slices.
  2. Top the lower four bread slices with the veggies and roasted garlic.
  3. Drizzle over with the olive oil, close sandwiches and warm in the oven at 180 degrees C for five minutes.
  4. Serve with French fries.
Ingredients:
2 tbsp butter
1 french loaf, cut in four portions and sliced in half horizontally
50 gms zucchini, sliced and grilled
50 gms mushrooms, sliced and sautéed
1/2 bunch spinach, blanched and chopped
1 1/2 tbsp chopped garlic, oven roasted until lightly charred
1 tbsp olive oil
Salt and pepper, to taste
60 gms french fries
