Colocasia chips

Method
  1. Wash the colocasia throughly
  2. Scrape the outer skin and wipe with a cloth (just to remove the stickiness).
  3. Slice them into thin chips with the help of a chips slicer.
  4. Collect them on a cloth or plastic sheet (do not put them in water).
  5. Deep fry in batches in hot oil till golden yellow in colour.
  6. (they may be sticky initially but when you put them in oil and stir, they will get separated while frying).
  7. Remove to a deep pan or basin .
  8. Mix salt & red chilli powder (mixed with crushed garlic)
  9. Sprinkle this on chips while they are still hot.
  10. Gently toss the basin so that the chips are well coated with the powders.

Variation:

  • You can use pepper powder in place of chilli powder.
  • Serve the chips with hot plain rice & sambar or any rice preparations
  • Ingredients:
    500 g - colocacia (preferably round of medium size)
    salt
    1 tbsp - red chilli powder mixed with 3 cloves of crushed garlic
    oil to deep fry chips
