Carrots with Herbs

Method
  1. Wash, halve carrots.
  2. Put in a microwave proof bowl.
  3. Add lemon grass stalk, roughly chopped.
  4. Add tomato, apple, microwave for 1 minute on high.
  5. Remove, allow to cool, covered, to room temperature.
  6. Refrigerate for some time, or till required.

To Make Combo:

  1. Run microwaved mixture in an electric blender till very smooth.
  2. Add 800 ml. chilled water, lemon juice, sugar, salt.
  3. Strain with a plastic strainer, chill.
  4. Put ginger in a muslin cloth, twist to a pouch.
  5. Rub this into a small bowl with 20 ml. water.
  6. Squeeze this ginger concentrate into juice.
  7. Add other herbs, run again in mixie till herbs are crushed.
  8. Pour into glasses serve chilled.

Making time: 30 minutes
Makes: 5 glasses
Shelflife: Best fresh

Ingredients:
5 to 6 - fresh healthy carrots, peeled
1/2 - apple, peeled
1/2 - tomato
1 tsp - lemon juice
1 stalk - lemon grass
1 sprig - mint leaves finely chopped
1 tbsp - basil leaves finely chopped
1/4 tsp - ginger crushed
2 tbsp - sugar
1/2 tsp - salt
