Method
- Slice starfruit halfway, horizontally.
- Save 2 slices for decorating glass.
- Chop remaining, put in an electric mixie.
- Chop gourd into chunks, add to starfruit.
- Add lemon juice, mint, sugar, salt, pepper.
- Run to a smooth paste.
- Add 350 ml. icecold water.
- Run again to a smooth frothy mixture.
- Strain through a juice sieve.
- Pour into 2 tall glasses.
- Serve chilled.
