Carrot vadas

Method
  1. Add all the ingredients (except oil) in a bowl and mix together to make thick dough using very little water. Keep aside.
  2. Pour oil in a deep skillet and heat. When it becomes hot, take small batches of the dough, shape into a small circle and drop carefully into the hot oil.
  3. When they become cooked and change color, remove from the hot oil and place on a plate covered with paper towel.
  4. Let them cool for some time and eat the yummy vadas.
  5. Repeat the same process with remaining dough/batter.
  6. Enjoy these yummy vadas any time of the day.Yummy!

Ingredients:
4 cups grated carrot
3 cups chickpea flour (Senagapindi, Besan)
1 cup powdered peanuts/groundnuts (roasted or raw)
1/2 cup grated coconut (fresh or dry)
1 tsp cumin seeds
A handful of cilantro, chopped finely
A small piece of ginger, skin peeled and chopped finely
Chopped Green Chilies or Chili Powder, as needed (I added 6 green chilies)
A pinch of soda
Salt as needed
Oil to deep fry
