Fry baingan after removing the outer cover.
Take a big pan and heat some oil along with hing. Put some jeera, garlic, ginger and mix it. Put onions and deep fry it. When the onions become red add tomatoes.
Add masalas like red chilli, salt, dhania powder and haldi powder and mix it properly. Add baingan with curd, tomato puree and mix it thoroughly after becoming reddish in colour put garam masala coriander leaves and butter. Shahi brinjal kabab is ready to serve.
