Method
  1. Peel and pit avocadoes, chop into small cubes.
  2. In large bowl, combine avocadoes, cucumber, onion, green pepper, tomatoes, cilantro, lemon juice, garlic, salt and hot pepper sauce.
  3. Stir in tomato juice, mix well.
  4. Refrigerate until chilled.
  5. Taste and adjust seasoning.

Makes: 8 servings

Ingredients:
2 - avocadoes
1 cup - chopped cucumber
1/2 cup - finely chopped green onion
1 - sweet green pepper chopped (bell pepper)
4 - red tomatoes,peeled,seeded and chopped
1 tbsp - fresh cilantro chopped
1 tbsp - lemon juice
1 clove - garlic, minced
2 cups - fresh tomato juice
1/4 tsp - hot pepper sauce
salt for taste
