Method
  1. Cover the tapioca with cold water.
  2. Heat till it begins to boil.
  3. Simmer for 2 minutes and drain.
  4. Cover the tapioca with hot water and simmer till soft. Cool, peel and mash.
  5. Heat 1 Tbsp of oil in a small fry pan.
  6. Add mustard and cumin seeds.
  7. When they pop, add onion.
  8. Fry till light brown.
  9. Add chilies, curry leaves and grated coconut. Fry lightly.
  10. Add chili and turmeric powders. Mix well and remove from fire.
  11. Add the fried mixture to tapioca. Add salt and mix well.
  12. Take 4 round lumps and flatten to � cm thick discs.
  13. Deep fry in hot oil till golden brown.
  14. Serve hot with chutney.

Makes: 20 to 25 Vadas

Ingredients:
� kg - tapioca
� cup - onion, finely chopped
1 tbsp - oil
1 tsp - mustard seeds
1 tsp - cumin seeds
2 - green chilies, minced
few - curry leaves, finely chopped
3 tbsp - grated coconut
� tsp - chili powder
� tsp - turmeric powder
salt to taste
oil to deep fry
