Ginger Lime with Mint Leaves

Method
  1. Boil the water with the sugar.
  2. After a boil add 1 tbsp lemon juice.
  3. Spoon off any dirt that collects on the top.
  4. Boil till you get one thread consistency.
  5. Remove from gas and cool completely.
  6. Grind together mint leaves and ginger pieces along with the lemon juice (do not add any water while grinding) to a fine mixture.
  7. Add this mixture to the sugar syrup and mix well.
  8. Store in dry airtight sterilised bottles.

To Serve:

  1. Pour approximately 4 tbsp of the ginger lime syrup in a tall glass.
  2. Pour sufficient water.
  3. Add little salt and a pinch of rock salt in it if needed. Mix well.
  4. Add crushed ice and serve chilled.
Ingredients:
1 litre - lemon juice
250 g - ginger
500 g - fresh mint leaves
1 kg - sugar
� litre - water
