Method
- Mix the sugar and water in a heavy bottomed steel vesel.
- Keep it on gas.
- When the sugar dissolves add citric acid.
- Give it one or two boils.
- Remove from gas and cool completely (it should take 5 to 6 hours to cool).
- Strain the syrup.
- Add the colour and essence.
- Mix well.
- Pour the syrup in dry strelised bottles and refrigerate it.
To Serve:
- Pour 3 -4 tbsp of the syrup in a tall glass and add sufficient water/ milk with some crushed ice.
- Serve chilled.
Ingredients:
1 kg - sugar
40O ml - water
8 gms - citric acid
� to 1 tsp - red colour
� to 1 tsp - rose essence
