Sweet potato coconut fry

Method
  1. Wash, peel and chop the sweet potato into small pieces and set aside.
  2. Heat a tablespoon of oil in a pan, add the chopped sweet potato and turmeric powder and mix well.
  3. Cover with a lid and let it cook till soft. Stir occasionally.
  4. Open the lid and fry until light golden color.
  5. Add the dry coconut powder, red chilli powder and salt and fry for few seconds.
  6. Turn off the heat and serve with hot steamed rice.

Ingredients:
1 cup - chopped sweet potato
1 tbsp - dry coconut powder
1/2 tsp - red chilli powder
1 tbsp - oil
A big pinch of turmeric powder
Salt to taste
