Cucumber boats

Method
  1. Peel and slice cucumber into length - wise halves and remove seeds.
  2. Cut off a thin slice from under each half so the cucumber lies flat.
  3. Heat oil in a pan.
  4. Add mustard seeds, curry leaves and grated coconut.
  5. Add chopped carrots, chillies, peas, sweet corn, cashew nut powder, raisins and salt.
  6. Cook for 8 to 10 minutes in low flame till the vegetables are soft and tender.
  7. Add sugar and stir for a minute.
  8. Remove from heat. Add lemon juice and mix well.
  9. Fill cucumber boats with the mixture.
  10. Decorate with sliced tomatoes and capsicum.
Ingredients:
3 medium cucumber
2 medium carrot
1/2 cup sweet corn
1/2 cup green peas
4 chopped green chillies
1 medium capsicum
2 medium tomatoes
3tbsp cashew nut powder
2tbsp coconut grated
1/2 tsp mustard seeds
1/2 tsp sugar
1tsp raisins
1tbsp lemon juice
few curry leaves
3 tbsp refined oil
salt according to taste
