Simple potato fry

  1. Boil potato in salted water for 3 to 4 min till it is just tender; drain and keep aside.
  2. Heat oil, add asafoetida, turmeric powder, curry leaves, crushed garlic cloves and cumin and fry for a min.
  3. Add the chopped potato and fry them till crisp and golden brown in colour.
  4. Sprinkle red chilli powder/pepper powder, toss and cook on low flame for 1 to 2 min.
  5. Sprinkle chopped coriander leaves, stir and remove.
  6. Can be served as side dish or as an evening snack with tea.

300-350g - potato, peeled and cut into 1-1&1/2 inch cubes
2 tbsp - oil
2 tsp - cumin, crushed roughly
A pinch of asafoetida
A pinch of turmeric powder
10 - curry leaves
1 tsp - pepper powder/red chilli powder
3 - peeled and crushed garlic cloves
2 tsp - chopped coriander leaves
