Khoya cashew roll

Method
  1. In a kadai, add sugar and water. Make a 2 string syrup.
  2. In a bowl, mix cashew nut powder and khova well.
  3. Add it to the sugar syrup and mix well constantly on low heat.
  4. Add 2 tbsp ghee. Mix well for a min.
  5. Add cornflour and mix well until it starts bubbling and starts to leaves the sides of the pan.
  6. Add another 2 tbsp of ghee.
  7. Add cardamom powder, mix and remove on a greased plate.
  8. Allow to cool.
  9. Mix all the stuffing ingredients together.
  10. Spread it on cooled cashew-khova mixture.
  11. Roll & cut into 1 inch pieces.
  12. Roll in silver foil and serve.
Ingredients:
100 g cashew nut powder
50 g unsweetened khova (mava)
1/2 cup sugar
1/2 cup ghee (clarified butter)
2 tsp corn flour
a pinch of cardamom powder
2 tbsp water
Silver foil for garnish

For stuffing:
2 tbsp khova
A pinch of saffron colour
A few strands of saffron
1 tbsp mixed chopped dry fruits (pista, almond)
