Peach Pie

Method
- Combine sugar, flour, nutmeg and salt.
- Add � a cup of syrup from the peaches. Cook until the mixture thickens, stirring continuously.
- Add butter, grated lemon peel, lemon juice, almond essence and the peaches.
- Line the pie plate with 9� pastry shell. Pour the mixture into it.
- Moisten edges and top with lattice crust.
- Flute the edges ad bake in a hot oven 180� for 45 mins.

2 tbsp - all purpose flour
1/2 cup - sugar
1 can - sliced peaches
2 tbsp - butter/margarine
2 tbsp - lemon juice
1/2 tsp - nutmeg
1/2 tsp - grated lemon peel
1/2 tsp - almond essence
a pinch - salt
9� - pastry shell
2 tbsp - all purpose flour
