Method
Combine sugar, flour, nutmeg and salt.
Add � a cup of syrup from the peaches. Cook until the mixture thickens, stirring continuously.
Add butter, grated lemon peel, lemon juice, almond essence and the peaches.
Line the pie plate with 9� pastry shell. Pour the mixture into it.
Moisten edges and top with lattice crust.
Flute the edges ad bake in a hot oven 180� for 45 mins.
