Chocolate Pineapple Biscuit Pudding

Method
  1. Add � cup sugar to pineapple with � cup of water.
  2. Simmer gently till the pineapple pieces are slightly softened. Leave aside to cool.
  3. Beat the egg yolks with remaining sugar till thick and light.
  4. Add the cocoa and beat till smooth.
  5. Mix flour with � cup of milk to a smooth paste.
  6. Add the remaining milk to the egg yolk mixture.
  7. Place on a low flame, and cook stirring till the mixture is hot. (not boiling).
  8. Add the flour paste and continue to cook till the mixture begins to simmer.
  9. Simmer gently for 2 more minutes.
  10. Remove from heat and beat in the butter and essence.
  11. Take a 7� square dish and arrange a layer of biscuits at the base.
  12. Spread � the pineapple mixture over it.
  13. Spread with 1/3 the chocolate mixture.
  14. Repeat the layers, ending with chocolate mixture.
  15. Sprinkle chopped walnuts on top and leave in refrigerator to chill.
  16. Serve cold, cut into slices.

Serves:8 to 10

Ingredients:
2 cups - fresh pineapple, peeled and cut into small pieces
2 cup - milk
1 cup - sugar
� cup - flour
� cup - butter
1 packet - marie biscuits
6 - egg yolks
3 tbsp - cocoa
1 tsp - vanilla essence
2 tbsp - walnuts, chopped
