Methi palak aloo

Method
  1. Fry onion in oil until it turns light brown.
  2. Add turmeric and ginger, fry for a sec.
  3. Add tomato and cook until it separates the oil.
  4. Add chilli, garlic and all other spices.
  5. Mix potato and salt in it.
  6. Cover it and cook it on a slow flame for 1-2 min.
  7. Add 3-4 tbs water, methi and spinach and cook uncovered on slow flame till potato becomes soft.
  8. Add ghee for flavour.
  9. This sookhi subji is good with paratha and roti.

Tip: To keep the green colour, cook uncovered.

Ingredients:
1 big potato cut into small pieces
1 medium onion chopped
1 medium tomato chopped
1 bunch green methi chopped
1 bunch palak (spinach) chopped
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tbsp dhania jeera powder
1/2 tsp garam masala or everest pav bhaji masala
1 clove garlic crushed
1 tsp crushed green chilli
1/2 tsp crushed ginger
Salt to taste
Oil and 1 tsp ghee
