Method
- Fry onion in oil until it turns light brown.
- Add turmeric and ginger, fry for a sec.
- Add tomato and cook until it separates the oil.
- Add chilli, garlic and all other spices.
- Mix potato and salt in it.
- Cover it and cook it on a slow flame for 1-2 min.
- Add 3-4 tbs water, methi and spinach and cook uncovered on slow flame till potato becomes soft.
- Add ghee for flavour.
- This sookhi subji is good with paratha and roti.
Tip: To keep the green colour, cook uncovered.
