Method
  1. Grind all of the above ingredients with a little Vinegar to make a smooth paste.
  2. Do NOT add water.
  3. Red masala is ready; can be stored in the refrigerator for a month or more.
  4. Use in fish, pork and mutton curries.
Ingredients:
50 gms red chillies
2 tbsp coriander seeds
1 tbsp cumin
1 tbsp black pepper
1 tsp - ginger
1 tsp - garlic
1 tsp - salt
1 tsp - sugar
3-4 cloves
1 stick - cinnamon
1 big onion
Tamarind, a small ball
