Tortilla Spring Rolls

  1. Heat 2 tablespoons of oil in a skillet, then add the onions and fry till they are softened.
  2. Then add the bell peppers and mushrooms, garlic and green chillies along with required amount of salt.
  3. Fry this for about 5-6 mins without adding any water. This filling should not have any water in it.
  4. Spread out the tortillas and spoon the filling carefully while still warm and add the grated cheese and cilantro on top.
  5. Roll up the tortillas and cut them into bite sized pieces
  6. Place these rolls in an oven proof dish and bake it at 350F for about 20 mins till the tortillas crisp up and the cheese has fully melted thus sealing the rolls well.
  7. Made with minimum amount of oil, these yummy and healthy tortilla spring rolls are ready to eat. These can be served with tomato sauce or salsa.
  8. Remember you can add any veggies of your choice like broccoli, corn etc to make it more healthy for your kids.
6 - flour tortillas
1 - onion, big finely chopped
1 - green/yellow/red bell pepper, finely chopped
2-3 small - mushrooms, finely chopped
1 cup - grated cheese
2 tbsp - cilantro, finely chopped
2 tbsp - oil
Salt as required
2 tsp - green chilles, finely chopped
2 pods - garlic, finely chopped
