Bhooga Chawal (Brown Rice)

Method
  1. Wash and soak the rice for 30 minutes.
  2. Heat oil in a dekchi, add cumin seeds, cloves, cinnamon, cardamoms and bay leaves.
  3. Saute for a minute.
  4. Add onions and fry on a low flame till golden.
  5. Add red chilli powder and saute for few seconds.
  6. Add the rice along with salt and water.
  7. Mix gently. Cook on a high flame till the first boil and then simmer.
  8. Cook till the rice is done.
  9. Serve hot with mutter paneer, methi alloo, alloo gobi or any yellow moong dal.
Ingredients:
2 cups - basmati rice
1 - big onion (finely sliced)
1 tsp - cumin seeds
3 - cloves
1 piece - cinnamon
3 - green cardamoms
1 - black cardamom
2 to 3 - bay leaves
1 tsp - red chilli powder
4 tbsp - oil
3 1/4 cups - water
salt to taste
