Method
- Keep a 10”x10” stone worksurface clean and ready.
- Grease liberally with oil, also a rolling pin and metal spatula.
- Put sugar in a heavy bottomed pan.
- Stir gently with a spatula, till fully melted.
- Add cashews, cardamom, mix.
- Take off fire, pour carefully onto prepared worksurface.
- Grease palms well before touching hot mixture.
- Work to blend with two greased spatulas.
- Quickly roll to desired thickness with greased rolling pin.
- Give shape by patting sides even.
- Mark desired pieces with knife while still soft.
- When cooled, break into marked pieces, store in airtight container.

Makes: 20-28 medium pieces
Shelflife: 1 week or more (keep away from humidity)
Warning Note:
Make sure you handly hot mixture carefully, as hot sugar can cause bad burns.
