Method
  1. Keep a 10”x10” stone worksurface clean and ready.
  2. Grease liberally with oil, also a rolling pin and metal spatula.
  3. Put sugar in a heavy bottomed pan.
  4. Stir gently with a spatula, till fully melted.
  5. Add cashews, cardamom, mix.
  6. Take off fire, pour carefully onto prepared worksurface.
  7. Grease palms well before touching hot mixture.
  8. Work to blend with two greased spatulas.
  9. Quickly roll to desired thickness with greased rolling pin.
  10. Give shape by patting sides even.
  11. Mark desired pieces with knife while still soft.
  12. When cooled, break into marked pieces, store in airtight container.

Making time: 15 minutes
Makes: 20-28 medium pieces
Shelflife: 1 week or more (keep away from humidity)

Warning Note:
Make sure you handly hot mixture carefully, as hot sugar can cause bad burns.

Ingredients:
1 cup - (heaped) coarsely crushed cashewnuts
1/2 tsp - cardamom powder
1 cup - softly packed brown sugar
oil for greasing
