Dates Chutney

Method
  1. Soak amchoor or tamarind in 250 ml. water, for 30 minutes.
  2. Boil it with the same water,till mushy.
  3. Cool a little, strain, keep aside as a thick paste.
  4. Boil dates in 200 ml. water, till most of it evaporates.
  5. Add jaggery, stir, take off fire.
  6. Add prepared paste, and all other ingredients.
  7. Mix well, adjust sweet, or other flavours as required.
  8. Cool completely, before storing in airtight container.
  9. Refrigerate, and use as a relish or chutney.

Making time: 30 minutes
Makes: 500 gms. chutney, approx.
Shelflife: 2 months, refrigerated

Ingredients:
100 gms - deseeded soft dates, chopped
100 gms - tamarind or amchoor (dried mango pieces)
250 gms - jaggery, grated or crushed
1 tbsp - musk melon seeds skinned
1 tsp - cumin powder
1 tsp - chilli powder
1/2 tsp - crushed mustard seeds
1/2 tsp - black salt
2 to 3 flakes - garlic crushed(optional)
salt to taste
