Ingredients:
1 kg. Brinjals
1/2 bottle gingelly oil
1/2 bottle vinegar
10 green chillies, slit lengthwise
50 gms. crushed jaggery
15 red chillies
1 tbsp. coriander seeds
1 tsp. cumin seeds
grind to a fine paste
1/2 tsp. fenugreek seeds
50 gms. ginger
80 gms. Garlic
1 tsp. turmeric powder
1/2 tsp. asafoetida powder
Salt to taste
