Jodhpuri Rice

  1. Boil rice with some salt in a pan and drain rice.
  2. Fry all the above ingredients (cauliflower, onion, potatoes, peas, cashews, raisins).
  3. In a kadai add 1 tbsp oil and put cumin seeds, cloves, tej patta, 1 tsp red chilli, 1/2 tsp turmeric powder, salt, amchur, garam masala , ginger garlic green chilli paste, cloves.
  4. Add the fried vegetables and fried bread pieces with some water to prepare vegetable curry.
  5. Once they come to a boil then turn off the gas.
  6. Cut tomatoes in round shape.
  7. In a deep vessel add rice layer, 4 tomatoes pieces and vegetable curry (little quantity).
  8. Make as many layers like this as possible.
  9. Then close the vessel with a plate on top and turn on gas for 5 mins to steam it.
  10. Serve it hot with Raita and Papad or Kadhi.
2 cups - rice
2 - bread slices cut in squares (fried)
1 cup - peas
4 - medium tomatoes
1 - large onion
3 - small florets of cauliflowers
small quantities of cashews and raisins
1 - medium potatoes
2 to 3 - cloves
2 to 3 - tej patta
1 tsp - ginger garlic and green chilli paste
fried gattas
oil for frying
oil for cooking
