Palak Parathas

Method
  1. Finely chop the spinach, green chillies and onion.
  2. Coarsely crush the garlic flakes.
  3. Wash the spinach well and put it in boiling water for a couple of minutes.
  4. Drain out the water and cool the spinach.
  5. Take the wheat flour in a thali.
  6. Add it to the spinach, green chillies, onion, garlic, cumin seeds, ajwain, red chillie powder, oil and salt to taste.
  7. Take just enough water to make a little stiff dough.
  8. Make dough just before you want to make the parathas as spinach has a lot of water content.
  9. Divide the dough into equal portions.
  10. Roll each portion into a triangular paratha.
  11. Roast the paratha on a pre-heated tava on a medium flame applying little ghee when flipping sides till the parathas are golden in color.
  12. Serve hot with boondi raita.
Ingredients:
1 bunch - spinach
3 - green chillies
1 - medium sized onion
8 to 10 flakes - garlic
300 gm - wheat flour
1 tsp - cumin seeds
1 tsp - ajwain seeds
1 ½ tsp - red chillie powder
2 tbsp - oil
4 to 5 tbsp - ghee for roasting parathas
salt to taste
water to make dough
