Rice Flour and Maida Roti

Method
  1. Knead maida with little salt, water and more oil as like obbattuor pooran poli.
  2. Keep it for 2 to 3 hours it should be little soft than chapati dough.
  3. The more you keep the soft rotis will be.
  4. In a thick bottom vessel keep one glass of water to boil.
  5. Add little salt to it.
  6. When starts to boil add rice flour and stir it nicely to avoid lumps.
  7. It will become one big lump.
  8. Switch off the gas.
  9. Knead the above rice flour mixture little to make it soft and break if any lumps.
  10. If you feel the quantity is less you can add little dry flour while kneading.
  11. Sprinkle some water if needed.
  12. The dough should be soft.
  13. Make little balls of cooked rice flour.
  14. Take little maida in hand and stuff rice balls in maida like paratha.
  15. Take few drops of oil on a thick plastic sheet or non stick sheet and roll it slowly.
  16. Use oil for rolling and bake it like chapatis on a tawa.
  17. This roti goes well with coconut chutney or mango pulp or any other curry.

rice flour - 1 cup
maida - 1 cup
oil - 1 cup
salt to taste
