Stuffed Tawa Baingan

  1. Wash and cut the brinjals into 1.25 cm thick round slices.
  2. Combine the coriander, green garlic, grated coconut, garlic, dhania-jeera powder, red chilli powder, turmeric powder, salt and sugar in a bowl.
  3. Mix well. Heat the oil in a non-stick shallow pan. Place some stuffing on one brinjal slice, and press another slice over it.
  4. Repeat with all the slices of brinjal.
  5. Carefully place each pair of stuffed brinjal slices on the pan, cover and cook on low flame for 5 to 7 minutes until the lower slice is brown.
  6. Carefully invert the slices and cook once again.
  7. Grease an oven-proof dish and place the stuffed brinjal pairs in it.
  8. Sprinkle grated cheese over and grill in a hot oven for 10 mins. Serve hot.
3 round big brinjals,
1 bunch coriander chopped
� cup chopped green garlic,
1 fresh coconut grated
3 cloves garlic crushed
3 tsp. dhania-jeera powder,
3 tsp. red chilli powder,
2 tsp. sugar,
1 tsp. turmeric powder,
salt to taste,
5 tbsp. oil,
3 cubes cheddar cheese grated.
