Corn and Mayonnaise Sandwiches

Method
  1. In a bowl mix together corn, mayonnaise, capsicum, tomato, salt and pepper.
  2. Mix well. Refrigerate for 15 to 20 minutes.
  3. Trim the sides of the bread.
  4. Apply butter on all the slices.
  5. Place 2 tbsp of the corn-mayonnaise mixture in the centre of a bread slice and evenly spread it.
  6. Place another buttered slice on top.
  7. Gently cut the sandwich diagnolly into two halves.
  8. Repeat with remaining slices of bread and corn-mayonnaise mixture.
  9. Serve with tomato ketchup.
Ingredients:
1 cup - American corn (boiled)
� cup - mayonnaise
14 slices - fresh bread
50 gms - butter
1 - small capsicum (very finely chopped)
1 - small tomato (desseded and very finely chopped)
pepper to taste
salt to taste
