Shahi Paneer in Minty Cashew Gravy

  1. Soak poppy seeds and cashewnut in milk for 15-30 min. Set aside.
  2. Meanwhile take a microwave bowl.
  3. Spray PAM generously and then saute onions, chilli, ginger,salt and garlic for 2 min in M/W. Stir it in the middle to avoid burning.
  4. Once soft grind it along with mint and coriander leaves till smooth.
  5. Tranfer to a bowl and then keep on M/W for another 1 minute.
  6. Add all the spices and puree and saute it for another 2 minutes.
  7. Alternatively heat a non stick pan and spray it generously with PAM.
  8. Saute the paneer slices till browned. You cut lots of oil this way. Else you can skip this process completely and jus add the paneer slices in the gravy in the end.
  9. Grind the cashew-poppy seed along with milk. It need not be smooth.
  10. Cashew pieces here and there does not matter since they add a nice crunch to the gravy.
  11. Now add this to our prepared gravy in the bowl.
  12. Heat for another 2 min and then add the paneer to the gravy.
  13. Heat for 1 min.
  14. Taste and season it if reqd. All ready :) The M/W timing is dependent on each type.
  15. So use it as per your M/W timing

1 small packet - paneer (or as per req ) (indian cottage cheese , cut into small chunks)
almost 1 cup - cashew nuts
1 cup - tomato puree
1 cup - low fat milk
1/2 cup - coriander leaves
1/2 cup - mint leaves
1 - onion, chopped
2 - inch piece ginger,grated
3 to 4 cloves, chopped
1 tbsp - poppy seeds (khus khus)
salt and chilli to taste (approx 1 chilli)
1 tbsp - sugar
2 tsp - coriander cumin powder
2 tsp - garam masala
