Strawberry Cheese Cake

Method
- Make pieces and crumb the biscuits to a fine powder.
- Combine this with the melted butter in a medium bowl.
- Mix well and then press this down firmly to the base of your cake tin.
- Place this in the fridge before you proceed.
- Beat the cream cheese until really smooth.
- Add sugar and continue beating until the sugar dissolves completely.
- If the cheese is too hard, heat it in the microwave for 4 mins and start beating immediately.
- Keep this at room temperature.
- Place gelatin, sugar in a bowl and mix.
- Now add the boiling water and mix until the mixture dissolves, it must be maintained at room temperature.
- Fold the gelatin into the cream cheese.
- Gently fold in the whipped cream and strawberries.
- Make sure you fold in very gently in one direction, so it maintains its fluffy texture.
- Spoon this onto the prepared crust.
- Refrigerate to set, it takes about 2 hrs.
- Decorate with strawberries and whipped cream just before serving.
